- 1 large butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 tsp honey or maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp smoked paprika (optional)
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- 1/3 cup shelled pistachios, roughly chopped
- 2 tbsp fresh parsley or mint, chopped
- 1 tsp lemon zest (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the butternut squash cubes with olive oil, honey, cinnamon, smoked paprika, salt, and pepper.
- Spread the squash evenly on the baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.
- Transfer roasted squash to a serving platter.
- Sprinkle with feta, chopped pistachios, and fresh herbs.
- Add lemon zest on top if desired, and serve warm.
Notes
- Replace feta with goat cheese for a creamier flavor.
- Add a drizzle of balsamic glaze for extra sweetness and tang.
- For a full meal, serve over quinoa or mixed greens.
