Description

Two soft red velvet cookies sandwiched with rich cream cheese frosting.

For the Cookies:

  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Make the Cookie Dough: Mix flour, cocoa powder, baking soda, and salt. In another bowl, beat butter, sugar, and brown sugar until creamy. Add egg, food coloring, and vanilla. Gradually mix in the dry ingredients.
  • Bake the Cookies: Scoop dough onto the baking sheet and bake for 10-12 minutes. Let cool.
  • Make the Filling: Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  • Assemble Sandwich Cookies: Spread frosting on one cookie and press another on top.

Notes

  • Chill the dough for thicker cookies.
  • Store in the fridge for a firmer filling.
