- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 1 1/4 cups (156g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup rainbow sprinkles (plus extra for topping)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease lightly.
- In a large bowl, whisk together melted butter and sugar until combined.
- Add eggs and vanilla extract, mixing until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the rainbow sprinkles.
- Spread the batter evenly into the prepared pan and top with extra sprinkles.
- Bake for 25–28 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Let cool completely in the pan before slicing into bars.
Notes
- Do not overmix the batter to keep the bars soft and tender.
- Use jimmies (long sprinkles) to prevent color bleeding.
- Store in an airtight container at room temperature for up to 4 days.
- Double the recipe and use a 9×13 pan for a larger batch.
