This Rainbow Layered Mousse Cake is a magical, no-bake dessert with layers of colorful, fluffy mousse on a soft sponge cake. A perfect treat for birthdays, celebrations, or when you want something fun and delicious!

- 1 pre-made vanilla sponge cake (cut into layers)
- 2 cups heavy whipping cream
- 1/2 cup sugar
- 2 tsp vanilla extract
- 1 tbsp gelatin powder + 3 tbsp water
- Food coloring (pink, blue, purple, yellow, orange)
- Sprinkles and meringue kisses (for decoration)
Instructions
- Whip the cream: Beat heavy cream, sugar, and vanilla extract until stiff peaks form.
- Prepare gelatin: Dissolve gelatin in warm water and mix it into the whipped cream.
- Color & layer: Divide the cream into 5 bowls, adding a different food color to each.
- Assemble: Spread one mousse layer over the sponge cake, refrigerate for 10 minutes, then repeat for each color.
- Chill & serve: Let the cake set in the fridge for 4 hours. Decorate with sprinkles and meringue kisses.

- Use a piping bag for neat mousse layers.
