For the pistachio sponge cake:
- 1 cup all-purpose flour
- 1/2 cup ground pistachios
- 1 tsp baking powder
- 1/2 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
For the mascarpone filling:
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Make the sponge cake: Preheat oven to 350°F. Mix dry ingredients, then whisk in eggs, milk, oil, and vanilla. Bake for 25 minutes, then cool.
- Prepare mascarpone filling: Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth.
- Assemble tiramisu: Slice sponge cake into layers. Brush with espresso, then layer with mascarpone filling. Repeat.
- Chill & serve: Refrigerate for 4 hours. Dust with cocoa powder and top with chopped pistachios before serving.
Notes
- Substitute ladyfingers for the sponge cake for a more traditional version.
- Adjust the coffee amount based on your preference.
