Description

This pistachio tiramisu is a luxurious twist on the classic Italian dessert, featuring layers of soft pistachio sponge cake, creamy mascarpone, and a dusting of cocoa powder.

For the pistachio sponge cake:

  • 1 cup all-purpose flour
  • 1/2 cup ground pistachios
  • 1 tsp baking powder
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

For the mascarpone filling:

  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Make the sponge cake: Preheat oven to 350°F. Mix dry ingredients, then whisk in eggs, milk, oil, and vanilla. Bake for 25 minutes, then cool.
  2. Prepare mascarpone filling: Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth.
  3. Assemble tiramisu: Slice sponge cake into layers. Brush with espresso, then layer with mascarpone filling. Repeat.
  4. Chill & serve: Refrigerate for 4 hours. Dust with cocoa powder and top with chopped pistachios before serving.


Notes

  • Substitute ladyfingers for the sponge cake for a more traditional version.
