- 1 cup heavy whipping cream
- 1/2 cup sugar
- 1/2 cup pistachio cream or pistachio paste
- 1 cup espresso or strong brewed coffee, cooled
- 24 ladyfinger cookies (Savoiardi)
- 1/4 cup chopped pistachios (for garnish)
- 1 tbsp cocoa powder (for dusting)
- 1 tsp vanilla extract (optional)
Instructions
- In a large bowl, beat mascarpone, sugar, pistachio cream, and vanilla extract (if using) until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream gently into the pistachio mascarpone mixture.
- Briefly dip ladyfingers into cooled espresso and arrange a single layer in a dish.
- Spread half of the pistachio cream mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining cream mixture.
- Smooth the top, cover, and refrigerate for at least 6 hours or overnight.
- Before serving, dust with cocoa powder and garnish with chopped pistachios.

- Use almond or hazelnut cream for a different nutty variation.
- Add pistachio liqueur to coffee for an adult twist.
