For the Pistachio Mousse:
- 1 cup heavy cream
- 1/2 cup white chocolate, melted
- 1/2 cup pistachio paste
- 1/4 cup sugar
- 1 tsp gelatin powder (dissolved in 2 tbsp water)
For the Cherry Filling:
- 1/2 cup fresh or frozen cherries, pitted
- 2 tbsp sugar
- 1 tsp cornstarch (mixed with 1 tbsp water)
For the Glaze:
- 1/2 cup white chocolate
- 1/4 cup heavy cream
- 1/4 tsp green food coloring (optional)
For Garnish:
- 1/4 cup chopped pistachios
- 1/2 cup fresh cherries
Instructions
Prepare the Cherry Filling:
- In a small saucepan, cook cherries with sugar over medium heat until softened.
- Add cornstarch mixture and stir until thickened.
- Let cool and set aside.
Make the Pistachio Mousse:
- In a mixing bowl, whip heavy cream to soft peaks.
- Fold in melted white chocolate and pistachio paste.
- Gently mix in dissolved gelatin and sugar until smooth.
Notes
- Use high-quality pistachio paste for the best flavor.
- Make sure the domes are completely frozen before glazing.
- Can be stored in the freezer for up to a week.
