Description

Pistachio and Meat Bites are a refined appetizer featuring a creamy pistachio paste, fresh herbs, and savory cured meat, all chilled for a delightful, bite-sized treat.


Ingredients

  • Pistachios (unsalted, shelled)
  • Cream cheese or mascarpone
  • Olive oil
  • Lemon juice
  • Salt
  • Black pepper
  • Fresh herbs (such as parsley or mint), finely chopped
  • Cooked cured meat (such as duck breast, beef bresaola, or prosciutto), sliced into small pieces

Instructions

  1. Make the pistachio paste: In a food processor, blend pistachios until finely ground. Add cream cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
  2. Add herbs: Stir in the fresh herbs by hand for a pop of color and flavor.
  3. Assemble bites: Spread a layer of the pistachio mixture into silicone molds (heart or round shapes work well). Place a piece of meat in the center, then cover with more pistachio mixture.
