Ingredients
- Pistachios (unsalted, shelled)
- Cream cheese or mascarpone
- Olive oil
- Lemon juice
- Salt
- Black pepper
- Fresh herbs (such as parsley or mint), finely chopped
- Cooked cured meat (such as duck breast, beef bresaola, or prosciutto), sliced into small pieces
Instructions
- Make the pistachio paste: In a food processor, blend pistachios until finely ground. Add cream cheese, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
- Add herbs: Stir in the fresh herbs by hand for a pop of color and flavor.
- Assemble bites: Spread a layer of the pistachio mixture into silicone molds (heart or round shapes work well). Place a piece of meat in the center, then cover with more pistachio mixture.
- Chill: Refrigerate for at least 2 hours or until firm enough to unmold cleanly.
- Serve: Unmold onto a platter and garnish with extra herbs or a drizzle of olive oil.
