Description

Refreshing pink gelatin cubes infused with a hint of citrus and garnished with bright lemon slices for a simple, colorful dessert.


Ingredients

  • 2 packets (6 oz total) strawberry or raspberry flavored gelatin
  • 2 cups boiling water
  • 2 cups cold water
  • 1 tablespoon lemon juice (optional for extra tang)
  • 12 lemons, thinly sliced

Instructions

  1. In a large bowl, pour the boiling water over the gelatin and stir until completely dissolved.
  2. Add the cold water and lemon juice, mixing well.
  3. Pour the mixture into a square or rectangular dish.
  4. Place the lemon slices gently on top so they float or partially submerge.
  5. Refrigerate for at least 4 hours or until fully set.
  6. Once firm, cut into cubes using a sharp knife.
  7. Serve chilled with additional lemon slices if desired.

Notes

  • Use silicone molds for fun shapes instead of cubes.
  • Add fresh berries for extra flavor and texture.
  • For firmer cubes, reduce cold water by 1/2 cup.
