Description

These Pineapple Teriyaki Meatballs are juicy, flavorful, and simmered in a sweet and tangy pineapple teriyaki sauce. Perfect as a main dish served over rice or as a party appetizer, this recipe is a delicious twist on classic meatballs.


Ingredients

  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp soy sauce
  • 1 tbsp chopped parsley
  • Salt and pepper, to taste

For the Sauce:

  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp cornstarch (mixed with 1 tbsp water for a slurry)

Optional Add-Ins:

  • 1 cup pineapple chunks
  • 1/2 cup diced red bell pepper

For Garnish:

  • Fresh parsley

Instructions

  1. Make the Meatballs:
    In a large bowl, combine ground chicken or turkey, breadcrumbs, egg, garlic powder, onion powder, soy sauce, parsley, salt, and pepper. Mix until well combined. Roll into 1-inch meatballs.
  2. Cook the Meatballs:
    Heat a skillet over medium heat with a drizzle of oil. Sear the meatballs for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. Prepare the Sauce:
    In the same skillet, combine pineapple juice, soy sauce, honey, rice vinegar, sesame oil, and garlic. Bring to a simmer. Add the cornstarch slurry and cook until the sauce thickens slightly.
  4. Simmer the Meatballs:
    Return the meatballs to the skillet, along with pineapple chunks and diced red bell peppers, if using. Simmer for 8-10 minutes, ensuring the meatballs are fully cooked (internal temperature of 165°F/74°C).
  5. Garnish and Serve:
    Sprinkle with fresh parsley and serve over rice or cauliflower rice for a complete meal.
