- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 jalapeño, seeded and minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 tablespoon tomato paste
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 1/2 cups vegetable broth or water
- Optional toppings: sour cream, shredded cheese, cilantro, sliced jalapeños
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic, bell peppers, and jalapeño. Cook for another 4–5 minutes until vegetables are tender.
- Stir in tomato paste, chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute to bloom the spices.
- Add diced tomatoes, beans, and broth. Stir to combine and bring to a simmer.
- Reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally, until thickened and flavorful.
- Taste and adjust seasoning if needed. Serve hot with desired toppings.
Notes
- For extra heat, leave the seeds in the jalapeño or add chili flakes.
- Can be made ahead and tastes even better the next day.
- Serve with cornbread, rice, or tortilla chips for a complete meal.
