- 1 cup chopped pecans
- 1/2 cup brown sugar
- 4 tbsp butter
- 1/4 cup corn syrup or maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup graham cracker crumbs or crushed vanilla wafers
- 8 oz semi-sweet or dark chocolate (for coating)
Instructions
- In a saucepan, combine butter, brown sugar, corn syrup, and salt. Heat over medium heat, stirring constantly until sugar dissolves and mixture thickens slightly.
- Remove from heat and stir in vanilla extract and chopped pecans. Let cool to room temperature.
- Mix pecan filling with graham cracker crumbs until sticky and moldable.
- Shape mixture into 1-inch balls and place on parchment-lined baking sheet.
- Chill in refrigerator for 30 minutes to firm up.
- Melt chocolate in double boiler or microwave, stirring until smooth.
- Dip each ball into melted chocolate to coat fully, then return to baking sheet.
- Optionally, press a whole pecan on top before chocolate sets.
- Refrigerate until chocolate is firm, about 1 hour.
Notes
- Use white or dark chocolate for coating variations.
- Add cinnamon or nutmeg to the filling for warmth.
- Substitute pecans with walnuts or almonds if preferred.
- Drizzle caramel or white chocolate over coated balls for decoration.
