- 6 cups crispy rice cereal
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup butterscotch chips
- 1 cup semi-sweet or milk chocolate chips
- 1 tbsp butter or oil (optional, for smoother topping)
Instructions
- In a large saucepan over medium heat, combine corn syrup and sugar. Stir constantly until the sugar dissolves and the mixture just begins to boil.
- Immediately remove from heat and stir in the peanut butter until smooth and fully combined.
- Add the crispy rice cereal and stir until evenly coated.
- Press the mixture into a greased or parchment-lined 9×13-inch pan using a greased spatula or wax paper.
- In a microwave-safe bowl, combine chocolate chips, butterscotch chips, and butter/oil if using. Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Pour the melted chocolate mixture over the cereal base and spread evenly with a spatula.
- Allow bars to cool at room temperature or refrigerate for 20–30 minutes until the topping is set.
- Cut into squares and serve.

- Don’t overboil the sugar mixture—remove from heat as soon as it begins to bubble to keep bars chewy.
- Store in an airtight container to maintain texture.
- Sprinkle sea salt on top for a sweet-salty flavor contrast.
