Description

Peanut Butter Scotcheroo Bars are classic no-bake treats made with crispy rice cereal, peanut butter, and a rich topping of melted chocolate and butterscotch chips. These chewy, sweet bars are a nostalgic favorite perfect for potlucks, parties, and everyday snacking.


Ingredients

  • 6 cups crispy rice cereal
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup butterscotch chips
  • 1 cup semi-sweet or milk chocolate chips
  • 1 tbsp butter or oil (optional, for smoother topping)

Instructions

  1. In a large saucepan over medium heat, combine corn syrup and sugar. Stir constantly until the sugar dissolves and the mixture just begins to boil.
  2. Immediately remove from heat and stir in the peanut butter until smooth and fully combined.
  3. Add the crispy rice cereal and stir until evenly coated.
  4. Press the mixture into a greased or parchment-lined 9×13-inch pan using a greased spatula or wax paper.
  5. In a microwave-safe bowl, combine chocolate chips, butterscotch chips, and butter/oil if using. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  6. Pour the melted chocolate mixture over the cereal base and spread evenly with a spatula.
  7. Allow bars to cool at room temperature or refrigerate for 20–30 minutes until the topping is set.
  8. Cut into squares and serve.

Notes

  • Don’t overboil the sugar mixture—remove from heat as soon as it begins to bubble to keep bars chewy.
  • Store in an airtight container to maintain texture.
  • Sprinkle sea salt on top for a sweet-salty flavor contrast.
  • Use crunchy peanut butter or add chopped nuts for added texture.
