Peanut Butter Scotcharoo Bars are no-bake dessert bars made with crispy rice cereal, peanut butter, chocolate, and butterscotch chips. They’re chewy, rich, and perfect for sharing.

- 6 cups crispy rice cereal
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
- Grease a 9×13-inch baking pan and set aside.
- In a large saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture begins to boil. Remove from heat immediately.
- Stir in peanut butter until smooth and fully combined.
- Add the crispy rice cereal and mix until evenly coated.
- Press the mixture evenly into the prepared pan using a spatula or wax paper.
- In a microwave-safe bowl, melt chocolate chips and butterscotch chips together in 30-second intervals, stirring between each until smooth.
- Spread the melted chocolate mixture evenly over the bars.
- Let cool at room temperature until the topping is set. Cut into squares and serve.
Notes
- Do not overcook the sugar mixture or the bars will become too hard.
- Store in an airtight container at room temperature for up to 5 days.
- For easier spreading, lightly grease the spatula or your hands.
