Description

Peanut Butter Scotcharoo Bars are no-bake dessert bars made with crispy rice cereal, peanut butter, chocolate, and butterscotch chips. They’re chewy, rich, and perfect for sharing.


Ingredients

  • 6 cups crispy rice cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Grease a 9×13-inch baking pan and set aside.
  2. In a large saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture begins to boil. Remove from heat immediately.
  3. Stir in peanut butter until smooth and fully combined.
  4. Add the crispy rice cereal and mix until evenly coated.
  5. Press the mixture evenly into the prepared pan using a spatula or wax paper.
  6. In a microwave-safe bowl, melt chocolate chips and butterscotch chips together in 30-second intervals, stirring between each until smooth.
  7. Spread the melted chocolate mixture evenly over the bars.
  8. Let cool at room temperature until the topping is set. Cut into squares and serve.

Notes

  • Do not overcook the sugar mixture or the bars will become too hard.
  • Store in an airtight container at room temperature for up to 5 days.
  • For easier spreading, lightly grease the spatula or your hands.
