For the Dough:
- 3 1/2 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 teaspoon sugar
- 1 cup warm milk (110°F/45°C)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 egg
For the Cheese Filling:
- 1 1/2 cups crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
For Topping:
- 1 egg yolk (for brushing)
- 2 tablespoons melted butter
- Fresh parsley (for garnish)
Instructions
- Prepare the yeast: In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
- Make the dough: In a large bowl, combine flour, salt, egg, and olive oil. Gradually add the yeast mixture and knead for 8-10 minutes until the dough is smooth. Cover and let it rise for 1 hour until doubled in size.
- Prepare the filling: In a bowl, mix feta, mozzarella, ricotta, oregano, and black pepper.
- Shape the bread: Roll out the dough into a rectangle and spread the cheese filling evenly over half. Fold the dough over and seal the edges.
- Bake: Transfer to a parchment-lined baking sheet. Brush the top with egg yolk and bake at 375°F (190°C) for 25-30 minutes, until golden brown.
- Finish & serve: Brush with melted butter, sprinkle with fresh parsley, and slice while warm. Enjoy!
