For the Dough:
  • 1 package refrigerated pie crusts (or homemade dough)
  • 1 egg (for egg wash)
  • 1 tablespoon milk
For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Prepare the Filling:
    • In a saucepan over medium heat, combine peaches, sugar, cinnamon, and vanilla.
    • Dissolve cornstarch in water, then stir into the peach mixture. Cook until thickened, about 3-5 minutes. Remove from heat and let cool.
  • Prepare the Dough:
    • Roll out the pie crust and cut into squares or circles, about 4 inches in size.
    • Spoon a small amount of peach filling onto half of the pieces.
    • Cover with another piece of dough, press the edges with a fork to seal, and poke a small vent hole in the top.
  • Bake the Hand Pies:
    • Preheat oven to 375°F (190°C).
    • Place pies on a parchment-lined baking sheet. Brush with egg wash (egg mixed with milk).
    • Bake for 15-18 minutes, or until golden brown.
  • Glaze and Serve:
    • Mix powdered sugar, milk, and vanilla until smooth.
    • While pies are warm, dip or drizzle with glaze. Let set before serving.

Notes

  • You can deep-fry these pies at 350°F (175°C) for 3-4 minutes until golden brown for a more donut-like texture.
  • Try adding a pinch of nutmeg for extra warmth in the filling.
