For the Dough:
- 1 package refrigerated pie crusts (or homemade dough)
- 1 egg (for egg wash)
- 1 tablespoon milk
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Filling:
- In a saucepan over medium heat, combine peaches, sugar, cinnamon, and vanilla.
- Dissolve cornstarch in water, then stir into the peach mixture. Cook until thickened, about 3-5 minutes. Remove from heat and let cool.
- Prepare the Dough:
- Roll out the pie crust and cut into squares or circles, about 4 inches in size.
- Spoon a small amount of peach filling onto half of the pieces.
- Cover with another piece of dough, press the edges with a fork to seal, and poke a small vent hole in the top.
- Bake the Hand Pies:
- Preheat oven to 375°F (190°C).
- Place pies on a parchment-lined baking sheet. Brush with egg wash (egg mixed with milk).
- Bake for 15-18 minutes, or until golden brown.
- Glaze and Serve:
- Mix powdered sugar, milk, and vanilla until smooth.
- While pies are warm, dip or drizzle with glaze. Let set before serving.

- You can deep-fry these pies at 350°F (175°C) for 3-4 minutes until golden brown for a more donut-like texture.
