- 2 boneless, skinless chicken breasts, halved horizontally
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 tsp paprika
- 2 cloves garlic, minced
- 2 fresh peaches, sliced
- 1/4 cup chicken broth
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 1 tbsp butter (optional, for finishing)
Instructions
- Season chicken with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium heat. Sear chicken for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
- Add garlic to the skillet and sauté for 30 seconds.
- Add sliced peaches, chicken broth, honey, Dijon mustard, apple cider vinegar, and thyme. Stir and simmer for 3-5 minutes.
- Return chicken to the skillet and coat with the peach glaze. Simmer for another 2-3 minutes.
- Add butter for a richer sauce, if desired. Adjust seasoning as needed.
- Serve warm, garnished with additional thyme if desired.
Notes
- Use ripe but firm peaches for best texture.
- This dish pairs well with rice, couscous, or a green salad.
- You can substitute nectarines if peaches aren’t available.
