This Pastel Rainbow Cheesecake is a dreamy, no-bake dessert that tastes just as magical as it looks. With soft layers of pastel color and velvety cream cheese texture, it’s perfect for birthdays, baby showers, or just making your day extra cute.
Ingredients
Crust:

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup melted butter
Filling:

24 oz cream cheese (softened)

1 cup powdered sugar

1 1/2 cups heavy whipping cream

2 tsp vanilla extract

Gel food coloring: lavender, pink, blue, mint
Instructions

Mix crust ingredients and press into the base of a springform pan. Chill for 10 mins.

In a bowl, beat cream cheese, sugar, and vanilla until smooth.

In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into cream cheese mix.

Divide filling into 4 bowls. Tint each with a different pastel color.

Layer each colored filling over the crust one at a time, smoothing between layers.

Chill for 4–6 hours (or overnight) until fully set.

Decorate with whipped cream swirls, pastel sprinkles, or mini meringues. Slice & serve cold!

Use a spoon or offset spatula to gently layer to avoid blending colors.
