- 2 cups crushed digestive biscuits (or graham crackers)
- 1/2 cup melted butter
- 2 cups cream cheese (softened)
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 2 tsp vanilla extract
- 1 tbsp gelatin + 3 tbsp warm water
- Food coloring (pastel pink, blue, yellow, purple)
Instructions
- Prepare the crust: Mix crushed biscuits with melted butter and press into a springform pan. Chill for 15 minutes.
- Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip the cream: In a separate bowl, whip heavy cream until stiff peaks form.
- Combine & color: Dissolve gelatin in warm water and mix into the cheesecake batter. Divide into bowls, tinting each with different pastel colors.
- Layer & chill: Pour each layer over the crust, smoothing gently. Refrigerate for 4 hours.
- Decorate & serve: Top with pastel meringues and sprinkles before serving.
