Description

This Pastel Cheesecake is a dreamy, creamy, and colorful dessert with a buttery biscuit base and a smooth, no-bake cheesecake filling. Light, fluffy, and perfect for any celebration!


Ingredients

  • 2 cups crushed digestive biscuits (or graham crackers)
  • 1/2 cup melted butter
  • 2 cups cream cheese (softened)
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 2 tsp vanilla extract
  • 1 tbsp gelatin + 3 tbsp warm water
  • Food coloring (pastel pink, blue, yellow, purple)

Instructions

  • Prepare the crust: Mix crushed biscuits with melted butter and press into a springform pan. Chill for 15 minutes.
  • Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth.
  • Whip the cream: In a separate bowl, whip heavy cream until stiff peaks form.
  • Combine & color: Dissolve gelatin in warm water and mix into the cheesecake batter. Divide into bowls, tinting each with different pastel colors.
  • Layer & chill: Pour each layer over the crust, smoothing gently. Refrigerate for 4 hours.
  • Decorate & serve: Top with pastel meringues and sprinkles before serving.
