- 4 cod fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon lemon juice
- Salt, to taste
- Black pepper, to taste
- Lemon wedges, for serving
Instructions
- Pat the cod fillets dry with paper towels. Season both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Carefully add the cod fillets to the pan, skin-side down if applicable. Cook for 3–4 minutes without moving, until golden brown.
- Flip the fillets and add butter and minced garlic to the pan. Cook for another 2–3 minutes, basting with the butter until the fish is opaque and flakes easily with a fork.
- Remove the skillet from heat. Drizzle the fillets with lemon juice and sprinkle with fresh parsley, dill, and chives.
- Serve immediately with lemon wedges on the side.
Notes
- Ensure the pan is hot before adding fish to get a good sear.
- Do not overcrowd the pan; cook in batches if necessary.
- This dish pairs well with rice, steamed vegetables, or a light salad.
