Description

This flavorful Oven-Baked Garlic Herb Chicken features juicy chicken pieces marinated in a savory garlic and herb mixture, then roasted to golden perfection. Perfect for a comforting family dinner or meal prep!

Ingredients

Units Scale

For the Marinade:

  • 3 lbs (1.4kg) chicken pieces (drumsticks, thighs, or mixed)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon lemon juice

Instructions

  • Prepare the Chicken:
    • Rinse and pat dry the chicken pieces. Place them in a large bowl or resealable plastic bag.
  • Make the Marinade:
    • In a small bowl, combine olive oil, minced garlic, parsley, thyme, paprika, salt, pepper, red pepper flakes (if using), and lemon juice. Stir well.
  • Marinate the Chicken:
    • Pour the marinade over the chicken, ensuring each piece is well coated. Cover the bowl with plastic wrap or seal the bag, and refrigerate for at least 1 hour (or up to overnight for more flavor).
  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or line it with foil.
  • Bake the Chicken:
    • Arrange the marinated chicken pieces in a single layer in the baking dish. Pour any remaining marinade over the chicken.
    • Bake for 35–45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden and crispy.
  • Serve:
    • Garnish with additional parsley and serve hot. Pair with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.

Notes

  • Use bone-in, skin-on chicken for maximum flavor and juiciness.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For an extra-crispy finish, broil the chicken for 2–3 minutes at the end of baking.
