For the Marinade:
- 3 lbs (1.4kg) chicken pieces (drumsticks, thighs, or mixed)
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon lemon juice
Instructions
- Prepare the Chicken:
- Rinse and pat dry the chicken pieces. Place them in a large bowl or resealable plastic bag.
- Make the Marinade:
- In a small bowl, combine olive oil, minced garlic, parsley, thyme, paprika, salt, pepper, red pepper flakes (if using), and lemon juice. Stir well.
- Marinate the Chicken:
- Pour the marinade over the chicken, ensuring each piece is well coated. Cover the bowl with plastic wrap or seal the bag, and refrigerate for at least 1 hour (or up to overnight for more flavor).
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or line it with foil.
- Bake the Chicken:
- Arrange the marinated chicken pieces in a single layer in the baking dish. Pour any remaining marinade over the chicken.
- Bake for 35–45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden and crispy.
- Serve:
- Garnish with additional parsley and serve hot. Pair with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.
Notes
- Use bone-in, skin-on chicken for maximum flavor and juiciness.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For an extra-crispy finish, broil the chicken for 2–3 minutes at the end of baking.
