- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1/2 head green cabbage, chopped
- 1/2 cup uncooked white or brown rice
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce or crushed tomatoes
- 4 cups beef or chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme or Italian seasoning
- Salt and freshly ground black pepper to taste
- Optional: red pepper flakes, 1 bay leaf
Instructions
- In a large soup pot, cook the ground beef or turkey over medium heat until browned. Drain excess fat if necessary.
- Add chopped onion, garlic, and carrots. Sauté for 4–5 minutes until softened.
- Add chopped cabbage, rice, diced tomatoes, tomato sauce, broth, Worcestershire sauce, thyme, salt, pepper, and optional bay leaf.
- Bring the soup to a boil. Reduce heat, cover, and simmer for 25–30 minutes, or until rice and cabbage are tender.
- Adjust seasoning to taste. Remove bay leaf before serving. Serve warm.
