- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 4 eggs
- 1/2 cup molasses
- 1/2 cup orange juice
- 1 tsp vanilla extract
- 2 cups mixed candied fruits (cherries, citrus peels, raisins)
- 1 cup chopped nuts (almonds, walnuts, or pecans)
Instructions
- Preheat oven to 325°F (163°C). Grease and line a cake pan.
- In a bowl, whisk flour, baking powder, cinnamon, and nutmeg.
- In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in molasses, orange juice, and vanilla.
- Gradually add dry ingredients and mix well. Fold in candied fruits and nuts.
- Pour into the cake pan and bake for 1.5 to 2 hours or until a toothpick inserted in the center comes out clean.
- Let cool completely before slicing.
