- For the Oatmeal Cookies:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 1/2 cups old-fashioned rolled oats
- For the Cream Filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons heavy cream or milk
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to the wet mixture, mixing until combined.
- Stir in rolled oats.
- Drop dough by rounded tablespoons onto the prepared baking sheets, spacing 2 inches apart.
- Bake for 10–12 minutes, or until edges are golden and centers are set.
- Cool cookies on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
- To make the cream filling, beat butter until smooth. Add powdered sugar, vanilla, and 1 tablespoon cream. Beat until fluffy, adding more cream if needed for spreadable consistency.
- Spread or pipe filling onto the flat side of half the cookies, then top with the remaining cookies to form sandwiches.
Notes
- Make sure cookies are fully cooled before adding the cream to prevent melting.
- Store sandwiches in an airtight container in the fridge for best texture.
- You can freeze unfilled cookies and assemble just before serving.
