- 1 cup rolled oats or almond flour
- 1 cup Medjool dates, pitted
- 1/2 cup nut butter (peanut, almond, or coconut)
- 1/4 cup cacao or cocoa powder
- 1/4 cup chopped nuts or seeds (pistachios, cashews, or macadamias)
- 1 tbsp melted coconut oil (optional)
- 1/2 tsp cinnamon (optional)
- 1 tsp vanilla extract (optional)
- 2 tbsp dark chocolate chips (optional topping)
Instructions
- In a food processor, pulse oats or almond flour until fine.
- Add dates, nut butter, cacao powder, coconut oil (if using), cinnamon, and vanilla. Process until mixture is uniform and sticky.
- Fold in chopped nuts or seeds for added crunch.
- Scoop and roll mixture into bite-sized balls using a tablespoon. Optionally roll in cacao powder, shredded coconut, or crushed nuts.
- Place on a tray and chill in the refrigerator for at least 30 minutes until firm.
Notes
- Use almond flour or protein powder for a grain-free version.
- Substitute nut butter with seed butter for a nut-free option.
- Dip in melted dark chocolate for a richer bite.
