Description

Nutty Chocolate Fudge Bites are rich, chewy no-bake treats that blend chocolate, oats, and nuts into a satisfying and wholesome snack. Perfect for energy boosts, guilt-free desserts, or meal prepping.


Ingredients

  • 1 1/2 cups rolled oats
  • 3/4 cup natural peanut butter or almond butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup dark chocolate chips or chopped dark chocolate
  • 1/2 cup chopped nuts (walnuts, almonds, or peanuts)
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/4 cup dried cranberries or raisins (optional)
  • 2 tbsp shredded coconut or cocoa nibs (optional topping)

Instructions

  1. Line an 8×8-inch baking dish with parchment paper.
  2. In a saucepan over low heat, melt the peanut butter and honey (or maple syrup) until smooth. Remove from heat and stir in vanilla and salt.
  3. Add oats, chopped nuts, and dried fruit (if using) to the mixture. Stir well.
  4. Let cool slightly, then fold in chocolate chips so they don’t melt.
  5. Press mixture into the prepared pan, flattening evenly. Sprinkle with shredded coconut or cocoa nibs if desired.
  6. Chill for at least 2 hours until firm.
  7. Lift from pan using parchment, slice into squares or bars, and serve.
