Description

No-Bake Pecan Pie Energy Balls are a healthy, naturally sweetened snack made with dates, pecans, and warm spices. These bite-sized treats deliver all the comforting flavors of pecan pie in a wholesome, grab-and-go form.


Ingredients

  • 1 1/2 cups Medjool dates, pitted
  • 1 cup raw pecans
  • 1/2 cup rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional, for added sweetness)

Instructions

  1. Add dates to a food processor and pulse until they form a sticky paste.
  2. Add pecans, oats, cinnamon, nutmeg, and salt to the processor. Blend until mixture is crumbly but holds together when pressed.
  3. Add vanilla extract and maple syrup (if using), then pulse a few more times to combine.
  4. Roll the mixture into 1-inch balls using your hands.
  5. Store in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.

Notes

  • If dates are dry, soak them in warm water for 10 minutes and drain before using.
  • Use toasted pecans for a deeper, nuttier flavor.
  • These are great pre- or post-workout snacks.
