No-Bake French Silk Pie Squares are a rich and creamy chocolate dessert with a smooth, mousse-like filling on top of a buttery cookie crust — an easy, crowd-pleasing treat that requires no oven time.

- 1 1/2 cups crushed chocolate graham crackers or Oreo crumbs
- 6 tbsp unsalted butter, melted
- For the filling:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 oz unsweetened chocolate, melted and cooled
- 1 tsp vanilla extract
- 2 large pasteurized eggs
- For the topping:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- Chocolate shavings or curls (optional)
Instructions
- In a bowl, mix cookie crumbs with melted butter until well combined. Press evenly into an 8×8-inch pan. Chill in the fridge while making the filling.
- In a large bowl, beat softened butter and sugar until light and fluffy, about 2–3 minutes.
- Add melted chocolate and vanilla, mixing until smooth.
- Add pasteurized eggs one at a time, beating on high speed for 3–5 minutes after each egg until light and silky.
- Spread the chocolate filling over the chilled crust. Smooth the top and refrigerate for at least 4 hours or overnight to set.
- Whip heavy cream with powdered sugar until stiff peaks form. Spread over the chilled chocolate layer.
- Top with chocolate shavings if desired. Slice into squares and serve chilled.
Notes
- Use pasteurized eggs to ensure food safety since this dessert is not baked.
- For extra flavor, add a splash of coffee or espresso powder to the chocolate mixture.
- Chill thoroughly before slicing for clean layers.
- Store covered in the refrigerator for up to 4 days.
