No-Bake Éclair Cake is a simple and delicious layered dessert made with graham crackers, vanilla pudding, whipped topping, and a rich chocolate frosting. It mimics the flavor of a classic éclair without any baking required.

- 1 box (14.4 oz) graham crackers
- 2 boxes (3.4 oz each) instant vanilla pudding mix
- 3 cups cold milk
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 1 tub (16 oz) chocolate frosting
Instructions
- In a large bowl, whisk together vanilla pudding mix and cold milk until thickened, about 2 minutes.
- Fold in the whipped topping until fully combined and smooth.
- In a 9×13 inch baking dish, place a single layer of graham crackers on the bottom.
- Spread half of the pudding mixture evenly over the crackers.
- Add another layer of graham crackers over the pudding, then spread the remaining pudding mixture on top.
- Top with a final layer of graham crackers.
- Remove foil lid from chocolate frosting and microwave for 15-20 seconds to soften. Stir well, then spread evenly over the top layer of graham crackers.
- Cover and refrigerate for at least 6 hours or overnight to allow the layers to soften and set.
Notes
- Chilling overnight gives the best texture and flavor.
- Use chocolate ganache instead of canned frosting for a richer topping.
- Can be made up to 2 days in advance and stored in the fridge.
