Description

No-Bake Éclair Cake is a simple and delicious layered dessert made with graham crackers, vanilla pudding, whipped topping, and a rich chocolate frosting. It mimics the flavor of a classic éclair without any baking required.


Ingredients

  • 1 box (14.4 oz) graham crackers
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • 1 tub (16 oz) chocolate frosting

Instructions

  1. In a large bowl, whisk together vanilla pudding mix and cold milk until thickened, about 2 minutes.
  2. Fold in the whipped topping until fully combined and smooth.
  3. In a 9×13 inch baking dish, place a single layer of graham crackers on the bottom.
  4. Spread half of the pudding mixture evenly over the crackers.
  5. Add another layer of graham crackers over the pudding, then spread the remaining pudding mixture on top.
  6. Top with a final layer of graham crackers.
  7. Remove foil lid from chocolate frosting and microwave for 15-20 seconds to soften. Stir well, then spread evenly over the top layer of graham crackers.
  8. Cover and refrigerate for at least 6 hours or overnight to allow the layers to soften and set.

Notes

  • Chilling overnight gives the best texture and flavor.
  • Use chocolate ganache instead of canned frosting for a richer topping.
  • Can be made up to 2 days in advance and stored in the fridge.
