Description

These No-Bake Cookies are the perfect sweet treat that comes together in minutes! Made with creamy peanut butter, oats, and a rich caramel-like base, these cookies require no oven time and set beautifully at room temperature. Great for a quick dessert or snack, they’re chewy, delicious, and incredibly easy to make!


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup whole milk
  • 1/4 tsp salt
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1 tsp vanilla extract
  • 3 cups quick oats
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Prepare a Baking Sheet – Line a baking sheet with parchment paper or a silicone mat.
  2. Make the Caramel Base – In a saucepan over medium heat, melt butter, then add granulated sugar, brown sugar, milk, and salt. Bring to a boil and let simmer for 1 minute, stirring occasionally.
  3. Add Peanut Butter & Vanilla – Remove from heat and stir in peanut butter and vanilla extract until smooth.
  4. Mix in Oats – Add the quick oats and stir well until evenly coated. If using, mix in white chocolate chips.
  5. Form Cookies – Using a spoon or cookie scoop, drop spoonfuls onto the prepared baking sheet.
  6. Let Set – Allow cookies to set at room temperature for 30 minutes, or place in the fridge for quicker setting.
  7. Enjoy! – Once firm, serve and enjoy your chewy, delicious no-bake cookies.

Notes

  • For chocolate no-bake cookies, add ¼ cup cocoa powder to the sugar mixture.
  • You can use almond butter or sunflower butter as a peanut-free alternative.
  • Stir in chopped nuts, coconut flakes, or dried fruit for added texture.
