- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup whole milk
- 1/4 tsp salt
- 1/2 cup peanut butter (creamy or crunchy)
- 1 tsp vanilla extract
- 3 cups quick oats
- 1/2 cup white chocolate chips (optional)
Instructions
- Prepare a Baking Sheet – Line a baking sheet with parchment paper or a silicone mat.
- Make the Caramel Base – In a saucepan over medium heat, melt butter, then add granulated sugar, brown sugar, milk, and salt. Bring to a boil and let simmer for 1 minute, stirring occasionally.
- Add Peanut Butter & Vanilla – Remove from heat and stir in peanut butter and vanilla extract until smooth.
- Mix in Oats – Add the quick oats and stir well until evenly coated. If using, mix in white chocolate chips.
- Form Cookies – Using a spoon or cookie scoop, drop spoonfuls onto the prepared baking sheet.
- Let Set – Allow cookies to set at room temperature for 30 minutes, or place in the fridge for quicker setting.
- Enjoy! – Once firm, serve and enjoy your chewy, delicious no-bake cookies.
Notes
- For chocolate no-bake cookies, add ¼ cup cocoa powder to the sugar mixture.
- You can use almond butter or sunflower butter as a peanut-free alternative.
