- 2 cups rolled oats
- 1/4 cup cocoa powder
- 1/2 cup peanut butter or almond butter
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil or butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark or semi-sweet chocolate chips (optional, for topping)
Instructions
- In a saucepan over medium heat, combine peanut butter, honey, coconut oil, and cocoa powder. Stir until smooth and fully melted.
- Remove from heat. Stir in vanilla extract and salt.
- Fold in rolled oats until evenly coated.
- Line an 8×8-inch baking dish with parchment paper. Press the oat mixture firmly into the dish.
- Optional: Melt chocolate chips and drizzle or spread over the top of the bars.
- Refrigerate for 1–2 hours or until firm.
- Slice into 12 bars and serve chilled.
