- 1/2 cup peanut butter (or almond butter)
- 3 cups crispy rice cereal
- 1 tablespoon coconut oil (optional, for smoother texture)
- 1/2 teaspoon vanilla extract

Instructions
- Line an 8×8-inch baking dish with parchment paper.
- In a microwave-safe bowl or using a double boiler, melt chocolate chips and peanut butter together, stirring until smooth.
- Stir in coconut oil, vanilla extract, and salt (if using).
- Gently fold in the crispy rice cereal until evenly coated.
- Pour the mixture into the prepared pan and press down evenly.
- Refrigerate for at least 1 hour, or until firm.
- Remove from the pan and cut into bars. Store in the fridge until ready to serve.
Notes
- Use dairy-free chocolate and nut butter for a vegan version.
- For extra crunch, add chopped nuts or seeds.
