Description

  • 3/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 2 1/2 cups whole milk
  • 4 large egg yolks
  • 3 tbsp butter
  • 1 1/2 tsp vanilla extract
  • Whipped cream (for topping)

Instructions

  1. In a medium saucepan, whisk together brown sugar, cornstarch, and salt.
  2. Gradually whisk in milk over medium heat until mixture is smooth.
  3. Cook, stirring constantly, until the mixture thickens and bubbles, about 7–10 minutes.
  4. In a separate bowl, lightly beat the egg yolks. Temper by slowly whisking in some of the hot mixture.
  5. Return the tempered yolks to the saucepan and continue cooking for 2–3 more minutes.
  6. Remove from heat and stir in butter and vanilla extract until fully combined.
  7. Pour the butterscotch filling into the prepared graham cracker crust. Smooth the top.
  8. Cover with plastic wrap, pressing directly onto the surface to prevent skin from forming.
  9. Chill in the refrigerator for at least 4 hours or overnight until set.
  10. Top with whipped cream before serving. Slice and enjoy cold.
