			- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 2 cloves garlic, minced
- 8 ounces green beans, trimmed and halved
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried Italian herbs (or a mix of basil, oregano, thyme)
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
- In the same skillet, add a bit more oil if needed and sauté garlic for 30 seconds.
- Add green beans and cook for 3–4 minutes until starting to soften.
- Stir in cherry tomatoes and Italian herbs, cook for another 2–3 minutes until tomatoes start to soften.
- Return chicken to the skillet and toss everything together.
- Sprinkle mozzarella over the top, cover the skillet, and cook for 1–2 minutes until the cheese is melted.
- Garnish with fresh basil if using and serve hot.
Notes
- Use pre-cooked or rotisserie chicken for quicker prep.
- Try adding a splash of balsamic glaze before serving for extra depth.
- Fresh mozzarella slices can be used instead of shredded cheese for a gooier texture.
