Molten Chocolate Chip Muffins are rich, bakery-style muffins with a soft, gooey chocolate center and melty chocolate chips throughout—perfect for breakfast or a decadent dessert.

- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 12 small squares of semi-sweet or dark chocolate (for molten center)
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together eggs, granulated sugar, brown sugar, buttermilk, oil, and vanilla until smooth.
- Combine wet and dry ingredients, mixing just until combined. Fold in chocolate chips.
- Fill each muffin cup halfway with batter. Place a piece of chocolate in the center, then top with more batter to fill about 3/4 full.
- Bake for 16–20 minutes, or until muffins are set and tops are cracked. Do not overbake to keep centers molten.
- Cool in the pan for 5 minutes before transferring to a wire rack. Serve warm for a gooey center.
Notes
- Use high-quality chocolate squares for the best molten effect.
- These muffins can be reheated in the microwave for 10–15 seconds to revive the molten center.
- Store in an airtight container for up to 3 days or freeze for longer storage.
