Description

Molten Chocolate Chip Muffins are rich, bakery-style muffins with a soft, gooey chocolate center and melty chocolate chips throughout—perfect for breakfast or a decadent dessert.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 12 small squares of semi-sweet or dark chocolate (for molten center)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together eggs, granulated sugar, brown sugar, buttermilk, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients, mixing just until combined. Fold in chocolate chips.
  5. Fill each muffin cup halfway with batter. Place a piece of chocolate in the center, then top with more batter to fill about 3/4 full.
  6. Bake for 16–20 minutes, or until muffins are set and tops are cracked. Do not overbake to keep centers molten.
  7. Cool in the pan for 5 minutes before transferring to a wire rack. Serve warm for a gooey center.

Notes

  • Use high-quality chocolate squares for the best molten effect.
  • These muffins can be reheated in the microwave for 10–15 seconds to revive the molten center.
  • Store in an airtight container for up to 3 days or freeze for longer storage.
