Ingredients

8 oz dark chocolate (60-70%), finely chopped

1/2 cup heavy cream

1/2 tsp peppermint extract

1 tbsp butter (optional for extra richness)
Instructions

Heat heavy cream in a small saucepan until just about to boil.

Pour hot cream over chopped chocolate in a heatproof bowl. Let sit for 2 mins.

Stir gently until smooth and glossy. Add peppermint extract (and butter if using).

Chill mixture in the fridge for 1–2 hours until firm.

Use good quality chocolate — it makes the truffle.

You can also dip in melted chocolate for a hard shell if you’re fancy like that.
