Instructions
- Heat cream and butter in a small saucepan over medium heat until just simmering.
- Pour over chopped chocolate in a heatproof bowl. Let sit for 1 minute, then stir gently until smooth and fully melted.
- Stir in peppermint extract, starting with 1/4 teaspoon. Taste and adjust as needed.
- Cover the ganache and refrigerate for 2–3 hours, until firm enough to scoop.
- Use a spoon or scoop to form small truffle-sized balls. Roll quickly between cold hands to shape.
- Roll in cocoa powder or dip in melted chocolate. While wet, sprinkle with shaved chocolate and optional sea salt.
