Description

Mint Chocolate Truffles with Shaved Chocolate Topping are smooth, decadent dark chocolate bites infused with refreshing peppermint and finished with elegant shaved chocolate—perfect for gifting, celebrations, or after-dinner indulgence.

Ingredients

Units Scale
  • 8 oz high-quality dark chocolate, finely chopped (60-70% cacao)
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/41/2 tsp pure peppermint extract, to taste
  • Cocoa powder (optional, for coating)
  • Shaved chocolate (for topping)
  • Sea salt (optional, for garnish)

Instructions

  1. Heat cream and butter in a small saucepan over medium heat until just simmering.
  2. Pour over chopped chocolate in a heatproof bowl. Let sit for 1 minute, then stir gently until smooth and fully melted.
  3. Stir in peppermint extract, starting with 1/4 teaspoon. Taste and adjust as needed.
  4. Cover the ganache and refrigerate for 2–3 hours, until firm enough to scoop.
  5. Use a spoon or scoop to form small truffle-sized balls. Roll quickly between cold hands to shape.
  6. Roll in cocoa powder or dip in melted chocolate. While wet, sprinkle with shaved chocolate and optional sea salt.
  7. Refrigerate until set. Let sit at room temperature for 10 minutes before serving for best texture.

Notes

  • Use peppermint extract, not mint flavoring, for a clean, refreshing finish.
  • Dust hands with cocoa or wear gloves when rolling to reduce stickiness.
  • Let ganache sit at room temperature before chilling to prevent condensation.
  • For a glossy shell, dip in tempered chocolate instead of cocoa powder.
  • Store truffles in paper liners for a polished, gift-ready look.
