Rich and fudgy mint chocolate brownies with a refreshing mint layer and a decadent chocolate ganache topping. Perfect for holiday treats or any mint-chocolate craving.

- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 cup unsalted butter (for mint layer)
- 2 cups powdered sugar (for mint layer)
- 1–2 tbsp milk (for mint layer)
- 1/2 tsp peppermint extract (for mint layer)
- Green food coloring (optional)
- 3/4 cup semisweet chocolate chips (for topping)
- 3 tbsp unsalted butter (for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a saucepan, melt 1/2 cup butter. Remove from heat and stir in sugar, eggs, and vanilla.
- Beat in cocoa, flour, salt, and baking powder. Spread batter into prepared pan.
- Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
- For the mint layer, beat 1/4 cup butter with powdered sugar, milk, peppermint extract, and green food coloring (if using) until smooth and spreadable.
- Spread mint mixture evenly over cooled brownies. Refrigerate for 30 minutes.
- Melt chocolate chips with 3 tbsp butter in the microwave or over a double boiler, stirring until smooth.
- Pour chocolate topping over mint layer and spread evenly. Chill until set.
- Cut into squares and serve.
Notes
- Adjust mint extract to taste—start with less if you’re unsure.
- For clean layers, refrigerate well before cutting.
- Use high-quality chocolate for the ganache topping.
