Description

Ingredients

  • 1 cup all-purpose flour

  • 2 tablespoons granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup buttermilk (or regular milk with 1 tsp vinegar)

  • 1 large egg

 


Instructions

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  • In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.

  • Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.

  • Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter.

  • Use a piping bag, squeeze bottle, or teaspoon to drop small rounds of batter onto the skillet.

  • Cook for 1-2 minutes, until bubbles form on the surface and the edges look set, then flip and cook for another 1 minute until golden.

 

  • Serve warm with syrup, berries, or your favorite toppings!


Notes

  • For extra fun, serve mini pancakes on skewers with fruit pieces for a brunch platter.

  • You can easily make them chocolate chip or sprinkle mini pancakes by adding mix-ins before cooking.
