Middle Eastern Chicken Tawook Skewers are tender, juicy grilled chicken pieces marinated in a flavorful blend of yogurt, lemon, garlic, and warm spices. This Lebanese-inspired dish is perfect for pairing with flatbread, rice, or salads.

- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup plain yogurt
- 3 tablespoons lemon juice
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
- 1 teaspoon ground paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- Cut the chicken into 1.5-inch cubes and place in a large mixing bowl.
- In a separate bowl, whisk together yogurt, lemon juice, garlic, olive oil, tomato paste, paprika, cumin, coriander, salt, and pepper.
- Pour the marinade over the chicken and mix well to coat. Cover and refrigerate for at least 4 hours, preferably overnight.
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Thread the marinated chicken onto skewers.
- Preheat grill or grill pan over medium-high heat.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
- Serve hot with garlic sauce, flatbread, rice, or salad.
Notes
- For extra flavor, marinate the chicken overnight.
- Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
- Add cayenne or chili flakes for a spicy twist.
- Mix in chopped parsley or mint for a fresh herb flavor.
- Can also be cooked in the oven or broiled if grilling is not an option.
