Description

Middle Eastern Chicken Tawook Skewers are tender, juicy grilled chicken pieces marinated in a flavorful blend of yogurt, lemon, garlic, and warm spices. This Lebanese-inspired dish is perfect for pairing with flatbread, rice, or salads.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup plain yogurt
  • 3 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. Cut the chicken into 1.5-inch cubes and place in a large mixing bowl.
  2. In a separate bowl, whisk together yogurt, lemon juice, garlic, olive oil, tomato paste, paprika, cumin, coriander, salt, and pepper.
  3. Pour the marinade over the chicken and mix well to coat. Cover and refrigerate for at least 4 hours, preferably overnight.
  4. If using wooden skewers, soak them in water for 30 minutes before grilling.
  5. Thread the marinated chicken onto skewers.
  6. Preheat grill or grill pan over medium-high heat.
  7. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
  8. Serve hot with garlic sauce, flatbread, rice, or salad.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  • Add cayenne or chili flakes for a spicy twist.
  • Mix in chopped parsley or mint for a fresh herb flavor.
  • Can also be cooked in the oven or broiled if grilling is not an option.
