Description
Mexican Street Corn, or Elote, is a popular Mexican street food featuring grilled corn on the cob slathered in a creamy, tangy sauce, and topped with cheese, chili powder, and lime.

- 4 ears of corn, husked
- 2 tbsp vegetable oil (for grilling)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 tsp chili powder
- 1/2 tsp smoked paprika (optional)
- 1 tbsp fresh cilantro, chopped
- 1 clove garlic, minced
- Juice of 1 lime
- Extra lime wedges, for serving
Instructions
- Preheat grill to medium-high heat and brush corn with vegetable oil.
- Grill corn for 10–12 minutes, turning occasionally, until charred and tender.
- In a small bowl, mix together mayonnaise, sour cream, garlic, lime juice, and a pinch of salt.
- Remove corn from grill and brush each ear with the creamy sauce.
- Sprinkle generously with cotija cheese, chili powder, and paprika if using.
- Garnish with chopped cilantro and serve with lime wedges.
Notes
- If cotija cheese is unavailable, feta cheese is a good substitute.
- You can also cut the corn off the cob and mix all ingredients in a bowl for esquites (street corn salad).
- For added heat, sprinkle with hot sauce or cayenne pepper.
