Main Ingredients:

  • 1 tsp olive oil
  • 11 1/2 lbs boneless, skinless chicken breasts or thighs, diced into 1-inch pieces
  • 2 tsp Italian seasoning, divided
  • Salt and pepper to taste
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onions
  • 1/4 cup diced sundried tomatoes
  • 3 garlic cloves, minced
  • 1/4 cup flour
  • 2 tbsp tomato paste (optional)
  • 68 cups chicken broth
  • 6 oz pasta
  • 1 cup heavy whipping cream
  • 1/21 cup grated Parmesan Reggiano cheese
  • 2 1/23 cups fresh spinach

Instructions

Sauté the Chicken:

  • Heat olive oil in a large soup pot or Dutch oven over medium-high heat.
  • Add chicken, 1 tsp Italian seasoning, salt, and pepper. Cook until browned on all sides, about 4–5 minutes. Remove chicken and set aside.

2. Cook the Vegetables:

  • In the same pot, add onions, carrots, celery, sundried tomatoes, and garlic. Sauté until vegetables are translucent, about 3–4 minutes.

3. Add Flour and Tomato Paste (Optional):

  • Sprinkle flour evenly over the vegetables in stages, stirring constantly to combine.
  • Stir in tomato paste (if using) for extra depth of flavor.

4. Incorporate the Broth:

  • Gradually whisk in chicken broth while scraping the bottom of the pot to deglaze. Stir to avoid lumps.

5. Simmer with Pasta:

  • Bring to a boil and add pasta, the remaining 1 tsp of Italian seasoning, and additional salt and pepper. Cover and simmer for 20 minutes, stirring occasionally.

6. Finish with Cream and Spinach:

  • Stir in heavy cream, fresh spinach, and Parmesan cheese. Let simmer uncovered for an additional 5 minutes until the spinach is wilted and the soup is creamy.

7. Adjust and Serve:

  • Taste and adjust seasoning as needed. Serve warm with crusty bread or a fresh salad.
