- 1 package ladyfingers (about 24 pieces)
- 1 cup lemon juice (freshly squeezed)
- 1/2 cup granulated sugar (for lemon soak)
- 1 tbsp lemon zest
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 tsp vanilla extract
- Optional: additional lemon zest or whipped cream for garnish
Instructions
- In a saucepan, combine lemon juice and granulated sugar over medium heat. Stir until sugar dissolves, then remove from heat and let cool.
- In a large mixing bowl, beat the mascarpone, cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth and fluffy.
- In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the cheese mixture.
- Quickly dip each ladyfinger into the cooled lemon syrup and arrange a layer in the bottom of an 8×8-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers.
- Repeat with a second layer of dipped ladyfingers and the remaining mascarpone mixture.
- Smooth the top and refrigerate for at least 4 hours or overnight until set.
- Before serving, garnish with lemon zest or whipped cream as desired. Slice into bars.
Notes
- Use fresh lemon juice for the brightest flavor.
- Do not soak ladyfingers too long or they will become soggy—quick dips are best.
- Chilling overnight yields the best texture and flavor.
- Store in the refrigerator, covered, for up to 4 days.
