Description

Lemon Tiramisu Bars are a refreshing twist on the classic Italian dessert, featuring layers of lemon-soaked ladyfingers and a creamy mascarpone filling. These no-bake bars are tangy, sweet, and perfect for spring or summer gatherings.


Ingredients

  • 1 package ladyfingers (about 24 pieces)
  • 1 cup lemon juice (freshly squeezed)
  • 1/2 cup granulated sugar (for lemon soak)
  • 1 tbsp lemon zest
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 8 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Optional: additional lemon zest or whipped cream for garnish

Instructions

  1. In a saucepan, combine lemon juice and granulated sugar over medium heat. Stir until sugar dissolves, then remove from heat and let cool.
  2. In a large mixing bowl, beat the mascarpone, cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth and fluffy.
  3. In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the cheese mixture.
  4. Quickly dip each ladyfinger into the cooled lemon syrup and arrange a layer in the bottom of an 8×8-inch baking dish.
  5. Spread half of the mascarpone mixture over the soaked ladyfingers.
  6. Repeat with a second layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. Smooth the top and refrigerate for at least 4 hours or overnight until set.
  8. Before serving, garnish with lemon zest or whipped cream as desired. Slice into bars.

Notes

  • Use fresh lemon juice for the brightest flavor.
  • Do not soak ladyfingers too long or they will become soggy—quick dips are best.
  • Chilling overnight yields the best texture and flavor.
  • Store in the refrigerator, covered, for up to 4 days.
