- For the crust:
- 1 1/2 cups graham cracker or digestive biscuit crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted

- 24 oz cream cheese, room temperature
- 3/4 cup granulated sugar
- 3 large eggs
- 3/4 cup sour cream or Greek yogurt
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 1 teaspoon vanilla extract
- For the topping:
- 1 cup cherry pie filling or fresh cherry compote
- 1/3 cup roasted pistachios, shelled and roughly chopped
- Lime slices or zest, for garnish (optional)
Instructions
- Preheat oven to 325°F (160°C). Grease a springform pan and line the bottom with parchment paper.
- Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the pan base and bake for 10 minutes. Cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, beating after each addition.
- Mix in sour cream, lemon and lime zest and juice, and vanilla extract until well combined.
- Pour filling over crust. Tap the pan gently to release air bubbles.
- Bake for 55–65 minutes until edges are set and center is slightly jiggly.
- Turn off oven, crack the door, and cool cheesecake inside for 1 hour.
- Refrigerate for at least 4 hours or overnight until fully chilled.
- Top with cherry pie filling, chopped pistachios, and lime garnish before serving.
