Description

Lemon Herb Roasted Chicken is a fragrant and flavorful dish with juicy, tender meat roasted alongside fresh herbs, garlic, and bright citrus for a comforting and elegant meal.


Ingredients

  • 4 bone-in, skin-on chicken thighs or breasts
  • 1 lemon, sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste
  • 1 tablespoon chopped chives or green onions (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine olive oil, lemon juice, garlic, rosemary, thyme, parsley, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin for extra flavor.
  4. Place chicken in a baking dish and top with lemon slices.
  5. Roast for 35–45 minutes, or until skin is golden and internal temperature reaches 165°F (74°C).
  6. Let rest for a few minutes before serving.
  7. Garnish with chopped chives or green onions if desired.

  • Add baby potatoes or carrots to make it a one-pan meal.
  • Use drumsticks or a whole chicken for variety.
  • Swap in oregano or basil for a different herb profile.
