- 4 bone-in, skin-on chicken thighs or breasts
- 1 lemon, sliced
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
- 1 tablespoon chopped chives or green onions (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine olive oil, lemon juice, garlic, rosemary, thyme, parsley, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin for extra flavor.
- Place chicken in a baking dish and top with lemon slices.
- Roast for 35–45 minutes, or until skin is golden and internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before serving.
- Garnish with chopped chives or green onions if desired.

- Add baby potatoes or carrots to make it a one-pan meal.
- Use drumsticks or a whole chicken for variety.
- Swap in oregano or basil for a different herb profile.
