- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 cup long-grain white rice
- 2 1/4 cups chicken broth
- 2 tablespoons fresh parsley, chopped (for garnish)
- Optional: lemon slices for garnish
Instructions
- Season chicken breasts with salt, pepper, oregano, thyme, lemon zest, and half the lemon juice.
- Heat olive oil in a large skillet or pan over medium-high heat.
- Sear chicken on both sides until golden brown, about 3–4 minutes per side. Remove and set aside.
- In the same pan, add garlic and sauté for 30 seconds.
- Add rice and stir to coat in the oil and garlic for 1 minute.
- Pour in chicken broth and remaining lemon juice. Stir well and bring to a simmer.
- Place chicken breasts on top of the rice, cover the pan, and reduce heat to low.
- Cook for 18–20 minutes, or until rice is tender and chicken is fully cooked (internal temp 165°F/74°C).
- Remove from heat and let sit, covered, for 5 minutes.
- Garnish with chopped parsley and lemon slices before serving.
Notes
- You can substitute chicken thighs for a juicier variation.
- Use fresh herbs for added flavor if available.
- Make it a meal with a side of steamed vegetables or a green salad.
