Description

This Lemon Garlic Chicken is a zesty, savory dish featuring tender chicken thighs baked in a buttery garlic-lemon sauce. Perfect for weeknight dinners or special occasions, it’s easy to make and packed with fresh, vibrant flavors.

  • For the Chicken:
    • 6 bone-in, skin-on chicken thighs (or use drumsticks)
    • 2 tbsp olive oil
    • 1 tsp paprika
    • 1 tsp garlic powder
    • Salt and pepper, to taste
  • For the Sauce:
    • 2 tbsp unsalted butter
    • 4 cloves garlic, minced
    • 2 tbsp honey
    • 3 tbsp fresh lemon juice (about 1 lemon)
    • 1/2 cup chicken broth
    • 1 tsp dried Italian seasoning
    • 1 lemon, sliced
  • For Garnish:
    • Fresh parsley, chopped

Instructions

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet.
  • Season the Chicken:
    Pat the chicken thighs dry with a paper towel. Drizzle with olive oil and season with paprika, garlic powder, salt, and pepper.
  • Sear the Chicken:
    Heat a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 3-4 minutes until golden. Flip and sear the other side for another 2-3 minutes. Remove the chicken and set aside.
  • Prepare the Sauce:
    In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in honey, lemon juice, chicken broth, and Italian seasoning. Bring the sauce to a simmer.
  • Assemble and Bake:
    Return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the chicken and arrange lemon slices around the skillet. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Serve and Garnish:
    Remove from the oven and spoon the sauce over the chicken. Garnish with fresh parsley and serve hot with rice, roasted vegetables, or a simple salad.

Notes

  • For a bolder flavor, marinate the chicken in olive oil, lemon juice, and garlic for 30 minutes before cooking.
  • If you don’t have an oven-safe skillet, transfer everything to a baking dish after preparing the sauce.
