Scale
- For the Chicken:
- 6 bone-in, skin-on chicken thighs (or use drumsticks)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- For the Sauce:
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp honey
- 3 tbsp fresh lemon juice (about 1 lemon)
- 1/2 cup chicken broth
- 1 tsp dried Italian seasoning
- 1 lemon, sliced
- For Garnish:
- Fresh parsley, chopped
Instructions
- Preheat the Oven:
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or oven-safe skillet. - Season the Chicken:
Pat the chicken thighs dry with a paper towel. Drizzle with olive oil and season with paprika, garlic powder, salt, and pepper. - Sear the Chicken:
Heat a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 3-4 minutes until golden. Flip and sear the other side for another 2-3 minutes. Remove the chicken and set aside. - Prepare the Sauce:
In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in honey, lemon juice, chicken broth, and Italian seasoning. Bring the sauce to a simmer. - Assemble and Bake:
Return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the chicken and arrange lemon slices around the skillet. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). - Serve and Garnish:
Remove from the oven and spoon the sauce over the chicken. Garnish with fresh parsley and serve hot with rice, roasted vegetables, or a simple salad.
Notes
- For a bolder flavor, marinate the chicken in olive oil, lemon juice, and garlic for 30 minutes before cooking.
- If you don’t have an oven-safe skillet, transfer everything to a baking dish after preparing the sauce.
