  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 1/2 cups (3 sticks) butter, room temperature
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups light brown sugar, packed
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups sweetened flake coconut
  • 2 cups chopped pecans

Instructions

  1. Cook the Pasta:
    • Boil pasta according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken and cook for 6–8 minutes until golden and fully cooked.
    • Season with salt, pepper, and dried thyme.
    • Remove the chicken from the skillet and set aside.
  3. Prepare the Garlic Butter Sauce:
    • In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Make the Creamy Parmesan Sauce:
    • Pour in the heavy cream and bring to a simmer.
    • Stir in the Parmesan cheese and cook for 3–4 minutes until the sauce thickens slightly.
  5. Combine and Serve:
    • Add the cooked pasta and chicken back into the skillet. Toss everything together to coat evenly in the sauce.
    • Garnish with fresh parsley and serve immediately.
