- 1 block firm tofu, drained and pressed
- 1/2 cup maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp vanilla extract
- 1 tbsp cornstarch
- 3/4 cup unsweetened plant-based milk (such as almond or soy)
- 1 tbsp nutritional yeast (optional)
- 1 tbsp coconut oil or vegan butter, for frying
- 1 cup fresh berries (strawberries, blueberries, raspberries, etc.)
- Powdered sugar, for garnish (optional)
- Pinch of salt
Instructions
- Cut the tofu into 1/2 inch thick slices resembling bread slices.
- In a mixing bowl, whisk together the plant milk, maple syrup, cinnamon, nutmeg, vanilla extract, cornstarch, nutritional yeast (if using), and a pinch of salt to make the batter.
- Dip each tofu slice into the batter, ensuring it’s fully coated.
- Heat coconut oil or vegan butter in a non-stick skillet over medium heat.
- Cook tofu slices for 3-4 minutes on each side or until golden and slightly crispy.
- Remove from heat and glaze with a bit more maple syrup if desired.
- Serve warm, topped with fresh berries and a dusting of powdered sugar if using.
Notes
- Use extra firm tofu for best texture and press well to remove excess moisture.
- You can marinate tofu in the batter for 10–15 minutes for deeper flavor.
- Great with a dollop of vegan yogurt or a scoop of coconut whipped cream.
- Adjust sweetness by varying maple syrup amount to taste.
