Ingredients

  • 1 block firm tofu, drained and pressed
  • 1/2 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1 tbsp cornstarch
  • 3/4 cup unsweetened plant-based milk (such as almond or soy)
  • 1 tbsp nutritional yeast (optional)
  • 1 tbsp coconut oil or vegan butter, for frying
  • 1 cup fresh berries (strawberries, blueberries, raspberries, etc.)
  • Powdered sugar, for garnish (optional)
  • Pinch of salt

Instructions

  1. Cut the tofu into 1/2 inch thick slices resembling bread slices.
  2. In a mixing bowl, whisk together the plant milk, maple syrup, cinnamon, nutmeg, vanilla extract, cornstarch, nutritional yeast (if using), and a pinch of salt to make the batter.
  3. Dip each tofu slice into the batter, ensuring it’s fully coated.
  4. Heat coconut oil or vegan butter in a non-stick skillet over medium heat.
  5. Cook tofu slices for 3-4 minutes on each side or until golden and slightly crispy.
  6. Remove from heat and glaze with a bit more maple syrup if desired.
