  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 2 Honeycrisp apples, peeled and thinly sliced
  • For the crumble topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
  4. Mix in sour cream until combined, then gradually add the dry ingredients and mix until smooth.
  5. Spread half the batter in the prepared pan. Layer with sliced apples, then spread remaining batter over the apples.
  6. Make the crumble: combine flour, brown sugar, and cinnamon. Cut in cold butter with a fork or fingers until mixture resembles coarse crumbs.
  7. Sprinkle crumble evenly over the top of the batter.
  8. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Honeycrisp apples hold their shape and add natural sweetness, but other firm apples like Fuji or Gala also work well.
