- 1 1/2 cups all-purpose flour

- For the crumble topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Mix in sour cream until combined, then gradually add the dry ingredients and mix until smooth.
- Spread half the batter in the prepared pan. Layer with sliced apples, then spread remaining batter over the apples.
- Make the crumble: combine flour, brown sugar, and cinnamon. Cut in cold butter with a fork or fingers until mixture resembles coarse crumbs.
- Sprinkle crumble evenly over the top of the batter.
- Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- Honeycrisp apples hold their shape and add natural sweetness, but other firm apples like Fuji or Gala also work well.
- Add chopped pecans or walnuts to the crumble for extra crunch.
- Serve with vanilla ice cream or whipped cream for an indulgent dessert.
